Cured Meats





SSB Butchery



The idea is simple: you, and if you'd like, a couple of pals pitch in to a half pig from SSB (the pigs come from Polyface Farm) and our team of chefs will teach you how to butcher your pig any way you'd like. From there, we portion everything out and you take your custom meat cuts home for yourself or to share among your friends and family. It's awesome! Here is the breakdown:

• Cost $825
• Reservations must be made two full weeks in advance
• Each ½ pig weighs approx. 110lbs
• You can bring two guests at no charge, & $100 per additional guest(s)
• Lunch is included!





Butchery Demonstration



Come watch one of our trained butchers & chefs break down a half pig! You’ll have an awesome time learning about different cuts of meat. We will even teach you the best way to cook them. You are sure to take away some helpful tips you can use in your own cooking. To make things even more fun, we will treat you to a variety of our favorite cured and smoked meats. So get a friend or two and come join us for a great lesson in old-school butchery!


Weekend Warriors



Lately, we have been getting a lot of requests from locals, & more so, out-of-towners who want a weekend’s worth of customized lessons on the work we do at SSBD. So if you, your friends, & family ever wanted to learn more about butchery, meat curing, sausage making, BBQ, &/or charcuterie – this is for you!

Here’s what you get!
  • Four private lessons with a trained butcher/chef/charcutier . Mix and match however you’d like! Choose between butchery, fresh sausage making, bacon, jerky, salumi, meat smoking, BBQ.
  • An in depth, yet comprehensive instruction on the process of your topics of choice
  • Delicious breakfast and lunch on both days with as much coffee & tea you can drink
  • A workbook outlining all of the key information throughout the experience
  • Your own butchers apron
  • A take-home bag with some of our favorite cured meats to enjoy
  • Continued support from our chef team as you take what you learned with us into your own kitchen!
  • Optional: Purchase your very own custom set of knives selected by our team of chefs.

Cost: $1,600 for up to two people. $500 for each additional person (up to 10 people total)

Sample Schedule

Day 1

Focus: Fresh Sausages and salumi

10:00am - 10:30am: coffee/tea and discussion on the basic processes fresh sausages
10:30am – 12:30pm: fresh sausage workshop, including demonstrations of every stage
12:30 – 1:30pm: lunch
1:30pm – 2:00pm: discussion on basic processes and principles of salumi
2:00pm – 4:30pm: Salumi workshop, including demonstrations
4:30 – 5:00pm: Q & A over a glass of wine and charcuterie/salumi board
5:00pm: See you tomorrow!


Day 2

Focus: Meat Smoking and jerky

10:00am - 10:30am: coffee/tea and discussion on the basic processes of meat smoking
10:30am – 12:30pm: meat smoking workshop, including demonstrations
12:30 – 1:30pm: lunch
1:30pm – 2:00pm: discussion on basic processes and principles of jerky and bacon making
2:00pm – 4:30pm: Bacon and jerky workshop, including demonstrations
4:30 – 5:00pm: Q & A
